CocoBacon Paleo Muffins

I just got my hungry little hands on some CocoBacon® last week and haven’t been able to stop eating them. They are the perfect marriage of healthy crisp coconut pieces with the unctuous flavor of bacon!
These savory muffins are my peace offerings from a (mostly) Paleo foodie to her vegetarian friends.  Made from coconut flour and pastured eggs, they are the perfect grain-less, high-protein baked goods for breakfast or a hardy afternoon snack that you can pack for the office or a day of hiking.  I’ve even thrown in some zucchini and green onion for good measure.
And just in case you are wondering if there are any wayward sub-healthy ingredients in CocoBacon®, let me assure you that they are totally legit!  They are made from organic ingredients including coconuts, spices and Celtic Sea Salt®.  Even the smokey mesquite flavor is organic!

CocoBacon Paleo Muffins

Serving Size: Makes 6 muffins

CocoBacon Paleo Muffins


  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon sea salt (I love to use Celtic Sea Salt®
  • 5 whole pastured eggs
  • 1/4 cup coconut oil ( or butter) melted, cooled slightly
  • 1/2 cup CocoBacon®, chopped + 1/4 cup as topping
  • 3 oz. zucchini, finely grated
  • 1 stalk green onion, finely minced (about 2 Tablespoons)


  1. Pre-heat oven to 350°F.
  2. Place six large paper muffin cups into a muffin baking dish.
  3. Sift the coconut flour, baking powder, and salt into a small bowl. Set aside.
  4. In a large bowl, add in the whole eggs and lightly beat together.
  5. Whisk in the melted coconut oil, or butter.
  6. Gently fold in the grated zucchini and green onions. Mix well.
  7. Fold in the 1/2 cup chopped CocoBacon®.
  8. Spoon batter into the large paper muffins cups, and top with a few more pieces of CocoBacon®.
  9. Baked for about 25 - 30 minutes. Check by inserting a toothpick. If it comes out clean, the muffins are ready.
